Pibarnon’s rosé has always been a distinctive Mourvèdre and Cinsault blend, though over the years the scales have been tilting more and more towards Mourvèdre, which now weighs in at a hefty 65%. The Cinsault component still has an important role to play in the blend (bringing elegance, perfume and balance), although we're delighted to see, and taste, even more of Mourvèdre's depth and spicy anise notes in the recent releases. The Cinsault grapes receive a careful pressing, while the Mourvèdre is bled saignée style and gets several hours of skin contact. Fermentation is with natural yeasts only and the wine is raised exclusively in tank. - BIB notes 2017
