A Fish Called Wonder King Vallry Pinot Grigio 2016
It’s Vegan, not that that should upset you, as it’s still made with respect, and praise of the grape-Gods. Just coz we didn’t harm any animals making this wine, doesn’t mean flavour and depth have been compromised.

The Fish benefitted from the beautiful 2015 year that shone in the King Valley. The dryer conditions and moderate temperatures allowed sugar levels to develop nicely and grapes ripened steadily, resulting in perfect natural acidity. Then by harvest in 2016, the timely rainfall resulted in a balance of refined aromatics.

The fruit is harvested cool in the early am and tipped directly into the press to quickly extract the juice with minimal skin contact and oxidative handling of the juice further helps remove any unwanted tannins and colour. The juice is clarified and fermented in a stainless steel tank for approximately 14 days at temperatures between 13° & 15° Celsius. The wine is stabilised and fined prior to bottling in July 2016 to lock in the crisp, fresh and unique Grigio aromatics.
